"To bypass the AutoAdminLogon process and to log on as a different user, hold down the SHIFT key after you log off or after Windows restarts."
It isn't very specific about when to hold the SHIFT key during a startup, but it seems to need to be held part way through the boot process, about when the Windows "orb" is displayed. However, in my experience it is somewhat hit-and-miss whether or not it works.
