Depends on the service. Some will allow running from a non-console system account, some won't. And there security implications as well. To change a service, open services.msc, click on the service, right-click for properties, click on the Log On tab, and select local system account.
Some services will not operate correctly without a login. If yours won't, you'll have issues.
