The built-in Guest account can be disabled but it cannot be deleted. The common desktop icons are stored in the "All Users" desktop folder. When you installed your software you, or the default setup option selected to make it available to all users and it placed the icons in the All Users Desktop folder, you can create the shorcuts on your desktop only and remove the ones in the All Users folder.
