Upon checking the DHCP log and looking at the MAC address it was assigning the IP address to, we discovered it was assigning an address to a disabled card and DNS was picking this up and updating the existing DNS record.
The card had previously been teamed with a Static IP via Broadcom software, but had been un-teamed and disabled. Activating the card seems to have remedied the problem, but doesn't answer why a disabled NIC was being issued (or asking for) a DHCP address.
