There are two ways to configure non-domain clients on WSUS: Local group policy or registry configuration.
For local group policy: Works the same way as for the GPO you configured on your domain, including client side targeting (adding a computer object to a WSUS group) the only thing is that you'll must configure it locally on each client. This is the recommended type of configuration.
For registry configuration: You'll find all the registry keys at HKEY_LOCAL_MACHINE\Software\Policies\Microsoft\Windows\WindowsUpdate. Check the WSUS deployment guide: http://technet.microsoft.com/en-us/library/cc720507.aspx for more info
