Either always make sure to drag your applications onto the laptop display before you close them or disable the secondary video in the Displays control when working with only one monitor.
For the immediate problem you can try right-clicking on the hidden app in the taskbar, select "Move" and use the keyboard cursor keys to slide the hidden window onto your laptop display.
