The *best* methodology, Dan, and as documented in the WSUS Deployment Guide, is to use Local Policy to configure each server according to how you want it set up.
If all servers will be configured identically, you can set up the first server, then export the registry key and subkeys at HKLM\Software\Policies\Microsoft\Windows\WindowsUpdate
and then import the REG file into the other servers.
After updating Local Policy, be sure to run 'gpupdate /force /target:computer' to get the policy changes applied to the local machine.
After importing a REG file, be sure to restart the Automatic Updates service so the AU service will see the registry changes.
