The easy way around this is to add a blank page at the end. Naturally, this won't work if you're using Page X of Y numbering, but you could still use SectionPages instead of NumPages for the Y if the entire document is a single section; just create the blank page using a Next Page section break instead of a page break (and omit the page number on the blank page).
