How do I change the default font settings for table/figure caption

How do I change the default font settings for table/figure captions? I
really do not like the blue font and size and am tired of changing it for
EVERY caption that I insert.

All captions use the "Caption" style when inserted, just update that
style to whatever you want and you should be fine.

In Word 2007 (the same might work in 2003), do CTRL+SHIFT+ALT+S. If
there is a "Caption" style in the list, you can update that one. If
you don't see it, pick "Manage Styles" at the bottom (3rd button). On
the "Edit" tab, you can find the "Caption" style in the list.
