Although what you're doing is sound in theory, it doesn't work in practice. The only practical way around it is to have an external Excel worksheet and link to that in both cases.
As for being able to move the document and Excel file around, you need to force Word to use relative paths. To do that, check out the solution I've posted at: http://www.wopr.com/cgi-bin/w3t/showthreaded.pl?Number=670027 You'll need to use the macro attached to that post.
