You can use the Opportunity's "Assigned To" field to assign the Opportunity, but this will not create an appointment or reminder for the assigned individual.
If you'd like the assigned individual to attend a linked appointment, consider forwarding the appointment through e-mail to the other person. The appointment has a Forward button in the Ribbon. If you have Small Business Server and Exchange, you can add the individual to the Scheduling tab, then send.
