There is no way to prove, from a document when it was created, without keystroke logging spyware pre-installed on the PC and that won't tell you when the document was mailed. You can, as Suzanne suggests, check the dates stored in the document, but they can be altered and only tend to suggest when the document was created. Forensic disc analysis is possible, but expensive, and still won't tell you when the document was mailed. Unless you have some other evidence, to corroborrate your suspicions, you need to tread very carefully, supported by legal advice.
