There was an option in 2003 which let you set the size of Office files printed via the "Insert Document as Printout" feature. The "Send to OneNote" features in 2007 replace this.
What I've had some success doing is to preset the following options in File | Page Setup: 1) Page size to "Letter" or whatever the size is of the original document. 2) Remove the page header (also under Format | Show Page Title). 3) Set the Print Margins to 0" on all 4 edges.
You can then save this as a Template for future reuse.
Once you print the document to that page, it should take up the entire space, and should match the original document's pagination when printed from OneNote.
