Can I link plain old text that is not in a text box or table from one file to
another? I am creating a syllabus for a class and I would like to have two
versions: one that I hand out to students and another that has extra notes
for myself.

Investigate the IncludeText field with bookmark option.
or if you are distributing only printed copies to the students use hidden
text to add your notes and hide them before printing.
