Is there someway within OneNote to scan a document, then have OneNote turn
that scanned information into text that can be worked with, rather than just
searched for?

You can do this in OneNote 2007.

Right-click on the picture after it has been inserted into a Page, and then
select "Copy Text from Picture". The OCR'd text is then available on the
clipboard to be pasted anywhere.
