When I open tools > options > save > paths
ON shows that the default notebook location:
\\?\Volume{cd49c6f2-7d7d-11dd-975f-001aa0bb1e87}\ON\Others
What might be this saying? I normally keep my notes on a usb stick.
When I am offline in ON (i.e. when my usb stick is not plugged in) I search in my computer the ON files but I cannot find them.
I checked the cache files but there are only word documents that I attached to a ON page. I dont see my notebooks and the sections...
Where are my ON files???????

If the default location is on a removeable storage device like a USB stick, that is the correct behind-the-scenes notation for that location.
What you're seeing is expected behavior. OneNote stores the files in local cache file whose internal structure is not intended to be viewed or modified from Windows. OneNote knows how to view and modify the information in that cache file. If you're looking for OneNote data, either use the search tools within OneNote, or the Windows Desktop Search tools which are a separate download for XP or are built-into Vista.

A hidden local cache file? I dont get it. I simply want to see my ON files. Why it is supposed to be hidden?
I want to see those files on my computer....

The files are Officially stored on the USB stick. If the USB stick isn't plugged in, OneNote uses the local cached copies of the ON content and then syncs changes to the stick when it is plugged in.
By design, there is no way to directly interact with the cached files.
If you want to see your ON content, just navigate around in OneNote.

On my computer the cache files and backup files are here:
Docs & Setting>Owner>Local Setings>kApplication Data>Microsoft>OneNote>12.0 (meaning office 12.0)
The cache files and Backup folder is here.
Others have files in different locations but this may give you an option. The cache files are visible as are the Backup files. I do highly recommend you do not change any thing you find except that in the Backup folder you can delete a Notebook ( I would not swear this is totally SOP but it worked for me)

As others have pointed out, you can certainly navigate to the cache location, but the files are not in the same format as "normal" OneNote sections, and are not intended to be directly manipulated.
Just use the OneNote UI to manage your data. Periodically sync to the USB stick. You'll be fine.

As Erik already explained, in the *cache* there are no data which to be touched *directly* (without ON). The situation is just the same when the notebooks are stored on the computer itself (not on an USB-stick) as in your case.
In case the notebook files are stored on the computer ON works the same way as if they were stored on the stick. The *cache* is the playground where ON works. Main difference: if the notebook files are sitting the stick, ON synchs with the files held there. If the notebooks are stored on a stick, ON synchs with the files held there. And therefore one has to keep the notebook files on *one* device only - either on the computer or on the stick. Keeping them in more than just one place just spoils synching.

Because it may be easier to arrange the files in win explorer. For example to rename the sections, move the section folders etc...

You'll have to do this on the *stick* and it's easy enough.
1.) Synch notebooks. 2.) Close the notebooks on the PC, 3.) Empty the cache, 4.) close ON, 5.) Re-arrange the files with the Win Explorer, 6.) Re-open the notebooks in ON.
