Write the signature on a piece of paper, and then scan the paper. Tell the scanner software to save the resulting picture as a graphic file in any of the common formats, such as JPG, GIF, or PNG. In Word, use the Insert > Picture > From File command to import the graphic file.
You may want to store the graphic as an AutoText in your Word template, so it can be inserted in any document. See http://www.word.mvps.org/FAQs/Customization/AutoText.htm.
