You're not an idiot; it's just that Word's help indexing won't find anything unless you know exactly the right term to search for, and maybe not even then.
The terms Word uses are "nonbreaking space" and "nonbreaking hyphen". You insert them with Ctrl+Shift+spacebar and Ctrl+Shift+hyphen, respectively. Alternatively, go to Insert > Symbol (in Word 2007, Insert > Symbol > More Symbols) and click the Special Characters tab.
