There's no Office-wide setting that changes your interface to mimic the look-and-feel you're accustomed to from Office 2003 and before. One thing you CAN do is minimize the ribbon (right-click on it). You can also change the color scheme to something less blue through options (Office Button --> Options --> Popular). I know that neither of these is what you really want, but I think it's the closest you can get.
