That behavior is by design. The Tab key will have two different intended outcomes depending on the situation:
If you are on a new line, Tab will indent to create another level to your outline. If you have already started typing, Tab will begin to create a table. In this scenario it is assumes that you are at the desired outline level.
BTW, Ctrl-Z is the general "Undo" command found in most programs, and is not intended to stop autoformatting.
