This sounds rather like the paragraph you've got the mailmerge field in is formatted with a particular Word Style, and someone has overridden that with hard-formatting. The best way of dealing with this is to use the Style definitions correctly.
Having said that, there is a workaround: .. select the problem field .. press Shift-F9 to reveal the field coding, which should look something like: {MERGEFIELD MyData} .. format the 'M' in MERGEFIELD the way you want the output formatted .. add '\* Charformat' to the end of the field, thus: {MERGEFIELD MyData \* Charformat} .. delete the '\* Mergeformat' switch if it's present .. run your mailmerge.
