Under opportunities when you select “closed won” it locks the standard BCM
fields so they cannot be altered, can the feature be applied to the fields i
have created? – on the same page as currently it does not lock my new fields

This sounds like a bug, Gordon. Let's hear what the BCM Team says...

Hi Gordan

This does not appear to be a bug. When you select Closed Won or Closed lost
it basically mean you have closed the opportunity. In that case the options
you have will be unavailable as you have sealed the fate of the business
transaction
