Install them in order of their release (2000 first, then 2003). Microsoft does not recommend running multiple versions on the same operating system, and you can not have more than one version of Outlook. Here is an article to get you started:

Virtual PC is a nice option for running multiple versions, because you can isolate them and run Outlook in each Virtual PC session.
