Basic question about templates and fields

I open a new document in Word 2007, and use one of the letter templates. It
has a lot of fields like "[Your Name]" and "[Recipient Name]" and "[City, ST
ZIP Code]". I want to fill in these fields. How do I do that? When I
select the field and type something in, it appears to simply overwrite the
field rather than "fill it in." Thanks in advance for the help.
