Click Home tab | Multilevel List | Define New List Style. Type a name for the list style. Click the Format button, and then click Numbering to define all aspects of numbering (for a description of the options, you can make use of the article at http://www.shaunakelly.com/word/numbering/OutlineNumbering.html). In particular, be sure to associate each level of the list style with a unique paragraph style. You can then apply numbering to text by applying the appropriate paragraph style.
Once created, a list style will be listed at Home tab | Multilevel List (under the "List Styles" heading). To modify a list style, you can right-click its icon and then choose Modify from the context menu; this displays the Modify Style dialog box.
