Quotation Marks word 2007

Can anyone tell me how to change the quotation marks from double to single
when I start a new document. I have tried the usual help sections but they
only seem to give information on changing from curly to straight marks.

? When you type them, if you don't type Shift-", but only ', you get
single quotation marks.
