How in Word 2007?
How do I find the Options to adjust as I could do in 2003?

Switch to Draft view and then double click on an Endnote reference number in
the body of the document and the footnote/endnote pane will be displayed.
From the pulldown in the top border of the pane, you can then select the
separator(s) and modify them.
You can also add the View Endnote Separator to the Quick Access Toolbar from
the Commands not in Ribbon group.
