You can edit your hosts file to point the exchange server to it's ip address.
So, open your c:\windows\system32\drivers\etc\hosts in notepad and add a line that looks like:
10.1.1.1 EXCHANGEHOST
Where the IP address is that of the exchange server and EXCHANGEHOST is that server's name.
