Most of Word's setup are stored in the Normal.dot template file (search your system for the file.) It also appears that there are settings stored in a file Excel11.pip Access11 and Word11.pip which are located in the Documents and Settings\XXXXX\Application Data\Microsoft Office (where XXXXX is the user name).
May be more but these are some of the locations and file names.
