When you define the view, or to change it, do this: From the main menu in Outlook, click on View, Current View, Define Views. Click on the view you want to modify and click on the Modify button. When the Customize View dialog comes up, click on Group By button. In the lower right corner, you'll find the Expand/Collapse Default dropdown and you can choose your option there.
