Hide Fields or Lock Fields

I am wanting to know if there is a way to lock certain fields to certain
users. for example if a manager assignes sales people to certain accounts.
the sales people can not change the assigned to field. this would prevent a
sales person from taking all the easy accounts away from another sales
person. I would be satisfied with even a way of hiding a field to see if the
certain field was modified. let me know if this can be accomplised any way.
the manager will be a database owner the sales people will be just users.
