Hmmm... which version are you running? In 2007, I don't get the date at the bottom of the page, but I do get other options. I wonder if the change needs to be made in the same place.... I don't know how to change the footer to something other than one of the pre-programmed options, I can help you in one way: I can tell you how to turn it off or to select a different option.
Go to File--> Print Preview. On the right hand side of the window, you will see a number of print setup options. The second to the last one is a drop down list for your footer options. The last item on the list is None. That is the one I tend to use...
