I know that it's possible to physically move tabs or folders so they are in alphabetical order. This is cumbersome if you have a lot of folders like I do. Is it possible to highlite all the folders somehow and alphabetize them?

Not automatically. The only way is to manually move the folders/sections, as you've found.

That feature is not present in 2007, either. Manual reorganization of data in OneNote is much easier with full "drag and drop" between and among all things in OneNote. Alphebetizing is still manual.
At this point, since the productis in a relatively late Beta, the features are set in stone, and no new features are likely to be added. Maybe in the next version ;)

No, alpha sorting of section tabs hasn't made it into OneNote 2007 to my dismay. It has been repeatedly requested throughout last year but wasn't high enough on the priority list.
I think the ON team was more focussed on improving navigation by eliminating the sometimes confusing "folders with sections" concept (now effectively dropped in ON2007) and implementing a "multiple notebooks with sections" concept instead.
But ON2007 does contain lots of excellent new features which I like.
I particularly like one of the less-heralded new features, the All Notebooks List, where you can see all your sections in all your notebooks at a glance and rearrange (aka sort) the sections (albeit manually) to your heart's content.
Anyone can download a public beta of ON2007 and take it for a spin right now. Apparently it'll work right up until the product is launched in early 2007.

I would like to say that not being able to sort is a basic feature that should be included. I am a Project Manager, and I create tabs for each client I receive an email from. So, I have one group called emails, and within that group, multiple tabs for each person's name. I go into LotusNotes and use the Send to One Note print feature, and everything is great up to this point. After all the emails are in OneNote, I then have to go and manually (very tedious), rename each tab with either the name of the subject line from Lotus, or the date of the email. Once this is done, I then have to manually reorder the pages by date and/or subject. If there is any easier way to do this, please let me know. I am not a programmer, so not sure if the tool kit would work for me.

The easiest way to do this is using a tool that was meant to organize your e-mails rather than using a tool that was obviously not designed for the job. Just leave the darned e-mails in your e-mail software. There you can sort by date received on one day, then by subject on the next, then by sender on the next.
People always get into trouble when they try to use ANY program as the be all end all, keep everything in it and never use any other program again type of solution. Even though MS includes features that allow you to send e-mails to OneNote that doesn't mean OneNote is really the best place to store all of your e-mail. There are just too many things about e-mail that OneNote just doesn't know about. Things that you are going to want to do something about.
Next people are going to start asking to be able to reply to an e-mail that they printed to OneNote.
