I'm purchasing an IBM Thinkpad X61. I've used tablets in the past, with the first versions of XP Tablet, but its been about 2 years since I've been in the tablet-scene. What are the pros/cons of Vista vs. XP Tablet 2005 for a tablet PC?

The X61 does a great job with Windows Vista. The improved handwriting and the ability to train it are only a couple of the main reasons to switch to Windows Vista. Windows Vista is far better, handwriting recognition is a huge improvement over Tablet 2005 (it actually learns your style), plus there's pen flicks, which enables you too quickly scroll around, or copy and paste and things like that. Then there's the mobility center where you can quickly get to things like screen brightness, rotation etc.
Cons, Windows Vista uses more memory, but as long as the machine has say 1GB of RAM it won't be that much of a problem.

Vista does use more memory but that's not as bad as it sounds. It actually *uses* more memory. As in it's better than free memory just sitting there. :) Vista's SuperFetch and ReadyBoost are designed to gobble up as much memory as they can to speed up loading and running applications. There's currently some issues with the implementation but just using more memory alone isn't always a con. Microsoft .NET applications claim a bunch of memory up front but as a result they have faster allocations than C++ programs.
Where Vista does have a disadvantage tho is disk access. Lots of it. Both because of the above-mentioned flaws in Superfetch/ReadyBoost and the indexing. As a result battery life is typically lower on Vista but your mileage may vary. For most people it's not enough to outweigh the huge tablet improvements.

Overall, how much bigger a hit does Vista put on a tablet's resources? (with all the eye candy turned off) I've got a two year old Electravaya Scribbler which I love but I couldn't handle it being slowed down very much. I've got 750mb of Ram.

I've got a Toshiba M200 with Vista on, which Toshiba don't support for Windows Vista, nor do nVidia support the graphics card. That's with 1GB of RAM.
Most of the time it flies along like it did with Windows XP. But sometimes, especially when resuming from hibernate it can get bogged down for 2 or 3 minutes with heavy disk access. That's probably mostly due to SuperFetch, which you could disable, but most of the time I resume from sleep, so its not a problem.

I have the same problem, what is SuperFetch and how to disable it? Did it exist on WinXP 2005?
