This sounds like the style with which the copied text is formatted is present in the target document, and that the definition in that document is for double-spacing. In Word XP (2002), if the "Paste Options" button is activated and working, when you paste you should see an icon at the bottom-right corner of the text you pasted. Click the dropdown arrow and you'll see selections that let you control the formatting. You'd want to keep the original formatting.
The option to enable/disable this button is in Tools/Options/Edit.
