Don't press Enter at the end of any line except at the end of a paragraph. Just let Word wrap the lines within paragraphs automatically.
The capitalization is the result of the option in Tools > AutoCorrect Options for "Capitalize first letter of sentences". When you press Enter, you're starting a new paragraph, and Word assumes that the start of a paragraph is also the start of a sentence.
You can turn off that option, but it would be much better to train yourself not to press Enter at the end of each line.
