Offline InfoPath Form Development with SharePoint

I am a new(ish) user and I want to develop a form that downloads a field from
a SharePoint list. This works fine when I go through the wizard and make the
connections, but I also want to develop using a data connection that has not
yet been built in SharePoint. I know all of the field names and the locations
where the SharePoint information will be, but the wizard will not allow me to
put in this information. Surely there is some way to develop an InfoPath form
"offline".

I have trawled the tutorials, but all the examples (understandably) use an
existing datasource. Can anyone point me in the right direction?
