After reading through all of the posts and only seeing questions related to this installation rather than any solutions, I tried a few different things on my own. Choosing "upgrade" from Office 2007 rather than "full installation" worked for me. Before that, I kept getting the freeze that most people described once the "installing Microsoft Office Professional Plus 2007 (beta)." If you don't have any previous editions of Office, maybe downloading a try-out version of an older version could work, then upgraded to 2007 from that? The only thing I'm worried about with the "upgrade" option is if this 2007 beta version screws up, then my existing version will be screwed as well.
Another option to potentially try is doing the "full installation" method of 2007 and only choose one or two components (i.e. Word or PowerPoint only) and leaving out all of the extra tools, or not selecting "Run all of this from my computer" versus "Run on first use of this program" etc.
